This recipe has been a favorite in our home for years.
If you want a sugar cookie that is soft and melts in your mouth... then this is the recipe for you!
I believe what makes them so good is rolling them in sugar, however, to make them fun and festive for kids, I sometimes roll them in sprinkles .
2 Sticks Organic Salted Butter (softened)
1 1/2 cups Organic Cane Sugar
1 Egg Room Temp
1 teaspoon Vanilla
2 3/4 Cups Organic All Purpose Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder (aluminum Free)
1 Tablespoon Buttermilk (Do Not skip this step)
Sugar or sprinkles for rolling cookies in.
Preheat oven to 375 degrees.
Mix butter in stand mixer...Add in Sugar and mix til fluffy. Add in egg and mix well on medium speed.
In a separate bowl whisk together Flour, baking soda and baking powder.
Add flour mixture to butter mixture a cup at a time and mix til combined. Add in buttermilk. I typically don’t have buttermilk on hand so I make my own by adding 1 Tablespoon of Vinegar to 1 cup of milk.
Refrigerate dough for 30 minutes. Remove from refrigerator and use a medium ice cream scoop ( I purchased mine from Publix) but you can also purchase one HERE. Scoop out dough and drop into a bowl of sugar or sprinkles. Coat all sides of cookie dough ball and Place in baking sheets covered in parchment.
Bake for 9 minutes. Remove from oven and cool on cookie racks.
Tip: I reuse the parchment covered pan after it’s cooled to bake another batch.
