Cucumber salad

I have been making this cucumber salad a lot lately and thought I would share.

I love the crunch of the cucumbers and onions and the sweet and sour of the honey and vinegar. I imagine a lot of you might remember your mothers and Grandmothers making this back in the day.

Cucumber Salad

• 6 Pickling Cucumbers or 3 English cucumbers washed and sliced 1/2 inch thick

• 1 Small Sweet Onion Chopped

• 1 Cup Apple Cider Vinegar ( I use organic, raw and unfiltered)

• 1/2 Cup of Local Honey

1 teaspoon Salt

1/2-1 teaspoon Pepper

1 teaspoon Celery Seed

Sprig of Dill (optional)

Combine Onions and Cucumbers in a bowl. Mix the remaining ingredients in a glass measuring cup then pour over top of the cucumber and onions.
Refrigerate for at least an hour before serving.

** I like to mix everything in a large Wide Mouth Mason Jar and keep it in the fridge so I can eat on it during the week.
**I use all organic ingredients when available.

A typical Lunch for me… Good Culture Cottage Cheese sprinkled with Kinders, avocado drizzled with olive oil and seasoned with Kinders The Blend and cucumber salad.
