Danish Wedding Cookies
Danish wedding Cookies have always been a favorite of mine, especially around the holidays.
They are also perfect to serve with coffee or tea and share with a friend. You could even put them on a small cake pedestal and give as a hostess gift around the holidays.
The best part about these amazing little cookies is they require few ingredients and are so easy to make.

Bring Butter to room temp or if removing straight from fridge, place in microwave for 10-12 seconds and flip them over and repeat 10-12 more seconds just until soft to the touch.
Whip butter in KitchenAid stand mixer on medium speed using paddle attachment. About 3 minutes.
Turn mixer to low and Gradually add in 3/4 Cups of Powdered Sugar, making sure to scrape down sides of bowl.
Add in one teaspoon of Pure Vanilla.
Gradually add in Two cups of Flour. Scrape down sides and mix thoroughly.
Add in one cup of toasted pecans.
Use a cookie scoop to form dough into balls and place evenly on parchment paper.
Bake in oven 300 degrees for 25 minutes.
While cookies are warm, dip into powder sugar to completely coat.
Cool on wire rack.
