Roasted Acorn Squash

Here is a simple, delicious and nutritious way to make Acorn Squash.

Some of you asked me to show you what I use my Cuisinart Air Fryer/Toaster Oven/Convection Oven / Oven for so I thought I would share! It’s also inspired me to use it for more of my recipes as well. *Note: You do not need the air fryer oven for this recipe and can use your regular oven.

Roasted Acorn Squash

•One Acorn Squash

•Extra Virgin Olive Oil

•Kinders The Blend season Salt

•Grass Fed Butter (optional)

•Pecorino Cheese (this is a healthier alternative but you can use any cheese you prefer)

Set Cuisinart oven to 400 degrees on the Convection setting and preheat 5 minutes. Alternatively, preheat regular oven to 400 degrees. Cut Acorn squash in half and remove seeds. Turn squash on its side and slice the ends off so they sit flush against pan. Cover baking pan with tin foil and set acorn squash onto pan with the inside facing up. Drizzle thoroughly with olive oil and the. Sprinkle generously with season salt. Turn squash face down on pan with the bottom up. Put in the Cuisinart on the #2 position rack or put in the middle of regular oven.

Bake in Convection oven for 25 minutes or in regular oven for 45 minutes.

Remove and turn acorn squash face up. Add a dab of butter and sprinkle with grated pecorino cheese. Be sure to scrape the sides down thoroughly. Serve with a salad or along with the main course of a meal.
